When it comes to food, I’m an explorer at heart. There’s something magical about discovering new flavors, rich traditions, and culinary craftsmanship that turns a simple meal into a memorable experience. When I traveled in the Marine Corps, I loved taking in the cultures that were vastly different from me- the music, the architecture, the history, and ALWAYS – The FOOD. I am grateful to live in Deland, Florida where there is a melting pot of cultures, backgrounds and ethnicities. While I like to try new and different things, there is something to be said for a place that provides a consistent, incredible experience. One restaurant that delivers this magic is Parva, the local Colombian restaurant nestled in the heart of Deland. Here’s why I adore this gem of a place and why it should be on your must-visit list.

The Warm Welcome

From the moment you step into Parva, you’re greeted with the kind of warmth that feels like a big hug from a long-lost friend. The vibrant decor, inspired by the colors and textures of Colombia, sets the stage for an unforgettable dining experience. The staff is always welcoming, treating each guest like family, which instantly makes you feel at home. Every waiter, server, manager or other employee I have interacted with in my multiples visits are warm, welcoming and authentic. Whether it is date night with Melissa, meeting my friends for lunch or grabbing something from their bakery-the experience has always been good.

The Flavor Explosion

The true star of Parva is, of course, the food. Colombian cuisine is known for its bold flavors and hearty portions, and Parva delivers on both fronts. The menu is a delightful mix of traditional dishes that showcase the best of Colombia’s culinary heritage. The most difficult thing about Parva is deciding which delicious dish you are going to order that day and which you will have to try at another time.

6 Must-Try Dishes

Empanadas: These crispy, golden pockets of goodness are filled with either queso, carne, pollo ( cheese, seasoned beef or chicken) and each bite is a crunchy, flavorful delight. They’re perfect as an appetizer or a snack to share.

Bandeja Paisa: This iconic Colombian dish is a feast on a plate. Imagine grilled steak, chicharrón (fried pork belly), chorizo, fried egg, avocado, plantains, rice, and beans all beautifully arranged to create a symphony of flavors and textures. It’s hearty, satisfying, and utterly delicious.

Arepas: Parva’s arepas are a must-try. These cornmeal cakes are crisp on the outside and soft on the inside, often stuffed with cheese, meats, or avocado. They’re versatile, comforting, and a true representation of Colombian street food.

Ajiaco: This traditional chicken and potato soup is a comforting bowl of goodness, rich with flavors of corn, capers, and a hint of cream. It’s perfect for those days when you need a little warmth in your soul.

Cacachapa con queso de mano – These are similar to semi sweet corn pancakes with some melted white cheese in the middle. Indulgent appetizer for the entire table.

The Cubano – Melissa is half Cuban, half Italian so if you are offering a Cuban sandwich, it better be great. Parva’s Cuban Sandwich is delicious- especially if you like your bread fluffy and sweet, then order it with the Media Noche (Sweet Bread) and I promise you that you will not be disappointed.

Latin Rice Bowl – While there are hamburgers and Churassco that are also fan favorites, my go to is the Latin Rice Bowl- cilantro rice, black or red beans, sweet plantains, Pico de Gallo and avocado. I get the “trio” which has grilled shrimp, Churrasco and grilled chicken, but you can get it plain, all three or with some other meats or veggies. It hits every taste sensation and is my go to. I try to eat healthy these days and the Macros in this meal fit within my plan.

The Sweet Endings

No meal at Parva is complete without indulging in their desserts. The tres leches cake is a slice of heaven, soaked in three types of milk and topped with a light, fluffy cream. For those who love a bit of caramel goodness, the flan is a smooth, creamy delight that melts in your mouth.

Parva isn’t just about food; it’s about the experience. The ambiance, the staff, the colorful decor, and the friendly chatter all combine to create an atmosphere that’s both vibrant and relaxed. It’s the perfect spot for a casual dinner with friends, a family celebration, or even a romantic date night.
